Instructions
- Prepare the Almond Financiers:
- a. Preheat oven to 180°C (350°F) and grease mini muffin molds. b. Melt the butter and let cool slightly. c. In a bowl, mix almond flour powdered sugar flour and salt. d. Whisk in egg whites and vanilla until just combined. e. Stir in melted butter until smooth. f. Spoon batter into molds filling 2/3 full. g. Bake 12 14 minutes until golden. Cool on rack.
- Make the Chocolate Truffles:
- a. Chop chocolate finely and place in a heatproof bowl. b. Heat cream until just simmering then pour over chocolate. c. Let sit 1 minute then stir until smooth. Stir in butter. d. Chill mixture 1 hour. e. Scoop and roll into small balls then coat in cocoa powder.
- Bake the Lemon Madeleines:
- a. Preheat oven to 190°C (375°F) and grease madeleine molds. b. Whisk egg sugar and lemon zest until light. c. Add lemon juice and melted butter whisking to combine. d. Fold in flour baking powder and salt. e. Spoon into molds filling 3/4 full. f. Bake 8 10 minutes until edges are golden. Cool before unmolding.
